In Japanese, you don't roll your r's. Not unless you're a tough currently asserting your masculine dominance and possibly looking for a fight. Yakuza roll their r's a lot.

The standard Japanese r, as described in the link above, is different than the English r. More like half way between l and r. It may also be a lateral alveolar flap, but it's kind of hard for me, as an English speaker, to appreciate exactly how I would know or what it would mean. And the literature seems conflicted on the issue.
Hinata is definitely pronounced with a t sound.
